 Fresh Apple & Aged Cheddar Omelet   
    A real Hudson River Valley recipe using
 fresh apples which are abundant in our orchards in a
scrumptious combination with  aged cheddar cheese.
Ingredients:
1 apple
1 1/2 oz. aged cheddar cheese (shredded)
2 eggs
1 tbsp. filtered water
extra virgin olive oil
sea salt
      fresh ground black pepper
   lemon juice

Cut apple into quarters, thinly dice 3/4 of it and put aside one quarter  brushed with lemon juice, to slice for garnish.  Mix eggs with water and pour into non-stick pan brushed with olive oil.  Cook slowly over medium / low heat till eggs start to become solid, add 1 oz.  of the shredded cheddar, sea salt &ground pepper, cook a little more till cheese melts slightly, then add diced apples.  Fold over twice to form a "wrap style" omelet, and top with the remainder of the shredded cheddar. Cover and cook slowly over very low heat for approximately 2 minutes. Turn off heat and let sit for another minute or till ready to serve.  Slice remaining apple and brush with a little lemon juice, place on side of plate as garnish.
Serve with whole grain toast or English muffin.
hint ~ To keep warm if making several for brunch, put on plates in a very low heat oven or warming drawer,
or "zap" for about 30 seconds in the microwave before serving. Use caution plates may be hot!
